To stay strong and healthy it is absolutely crucial that you get nutritious food to keep you going. We don’t always have endless amounts of time to spend on cooking. It is then good to know that if you’re just being a little clever you can get your healthy lunch even when the clock is ticking!

 

Omelet wraps

This is a twist on a rather traditional lunch. It takes a little time but on the other hand you can make it at night and have it ready for lunch the next day. Definetely a healthy lunch that will give you a solid dose for the rest of the day!

You need:

  • 2 eggs
  • 2 tbsp milk or water
  • 50 g smoked salmon
  • ½ avocado
  • Rucola
  • ¼ red onion

How to do it:

Mix egg and milk/water and make a thin omelet. Let it cool for a bit before filling it with smoked salmon avocado, rucola and red onion. Roll into a wrap and enjoy a healthy lunch!

Protein salad

Salad doesn’t have to be boring. You can vary the ingredients almost infinitely and you get a healthy lunch with lots of nutrition. Try this one with chicken and mango for a fresh meal that keeps you going.

You need:

  • 100 g chicken
  • 50 g heart salad
  • 25 g spinach
  • 1 tomato
  • ¼ red onion
  • ½ mango
  • ¼ pepper
  • ¼ cucumber

How to do it:

Chop salad and spinach. Cut tomato, cucumber and pepper in dices. Peel the mango and cut in dices. Slice red onion and top it all with chicken. Nutritious, healthy lunch with a delicious taste!

 

Yogurt and cottage cheese with fruits and berries

When you’re looking for a healthy lunch to boost your energy level! Yogurt and cottage cheese are rich in proteins and healthy gut bacteria. The energy packed nuts give you the boost you need to complete the day.

You need:

  • 50 g vanilla yogurt
  • 50 g cottage cheese
  • A handful of almonds
  • A handful of oatmeal
  • ¼ apple
  • Honey

How to do it:

Mix yogurt and cottage cheese in a small bowl. Chopp almonds and put over the yogurt mix together with diced apple and oatmeal. Top it with a small teaspoon of honey. Enjoy a simple and healthy lunch! You may vary the topping with berries and fruit as you please.

 

Smoothie with mango, pineapple and spinach

There is little to beat the smoothie when looking for a healthy lunch. Use fruits and berries and you are guaranteed to get a vitamin bomb regardless of ingredients. We recommend this tasty and delicious version with mango, pineapple and spinach!

You need:

  • 150 frozen mangos
  • 100 g frozen pineapple
  • 1/3 avocado
  • 1 large handful of spinach
  • 150 g natural yogurt
  • Milk
  • Sweetener

How to do it:

Run all ingredients through a blender until smooth. Add milk until you reach desired consistence. It won’t get much easier to make healthy lunch!
