Healthy salad suitable for low carb diets!

Low carb is known as a diet where you reduce the amount of carbohydrates in exchange of more proteins and more fat. The diet can be effective for weight-loss but also adds strict limitations food wise. A healthy salad is compatible with most diets. What is low carb?

Carbohydrates have been marked the bad guy in the weight-loss world. Many of us have a diet where there is an imbalance between proteins, fat and carbohydrates, which are all important nutrients for a healthy body and mind.

Many have chosen to drastically reduce the amount of carbohydrates in their diet to lose weight. The goal is to reduce carbohydrates and instead increase the amount of proteins and fat. The principles are built upon skipping all forms of bread, pasta, rice, potatoes and foods with sugar, such as candy and soda. Vegetables and healthy fat sources make up a large part of the diet.

Low carb broccoli salad with bacon and pistachios

Simple, healthy salad that taste absolutely amazing! It is just as good by itself as it is as side dish for your dinner.

You need:

  • 50 g pistachios
  • 120 g bacon
  • 1 dl Greek yogurt
  • 1 garlic clove
  • 2 tbsp cold pressed olive oil
  • ½ tsp salt
  • 1 tsp black pepper
  • 1 broccoli
  • 2 radishes
  • 3 tbsp cranberries

How to do it:

Roast the pistachios in a dry frying pan until they get lightly colored. Put aside and fry finely chopped pieces of bacon in the pan. Put them on a paper to get them crispy. Mix yogurt and finely chipped radishes and cranberries. Put most of the bacon and pistachios in. Keep a few of them as decorative topping when serving this beautiful, healthy salad.

Tip! You may use ham instead of bacon, and apple or melon instead of cranberries. If you want a vegetarian version, exchange bacon with pieces of avocado and roasted walnuts. Still a healthy salad, just free from meat!
